The Best Potato Salad

...I've ever had.

This past weekend we walked up to the Farmers Market and purchased a few items including red potatoes and spring onions. They are the main ingredients in my absolute favorite potato salad.

My Favorite Potato Salad and it just might be yours too.
3 lbs of small red potatoes
2 spring/green onions
1/2 - 3/4 cup of your favorite ranch dressing
sea salt and cracked black pepper to taste
  1. Lightly scrub the potatoes clean.
  2. Cube into bite size pieces.
  3. Boil until fork tender making sure they don't turn to mush.
  4. Drain and allow to completely cool.
  5. Thinly slice green onions.
  6. Add all ingredients into a bowl and mix until potatoes are evenly coated. Refrigerate for a couple of hours before serving.
My mom passed this recipe along to me and I don't know where it originated from. What I do know is it is the simplest and best tasting of all potato salads I've tried. You don't have to peel potatoes, boil eggs, or add a dozen different ingredients. I use Marzetti's Ranch dressing and only Marzetti's but if you've got a favorite give that a try.
